About Kyoto Cuisine Hishiiwa
We produce the traditional Kyoto cuisine for the delight of our customers.

Born and bred among the distinctive culture in Kyoto, Hishiiwa was founded in1829 as a caterer (A caterer that does not have eat-in space and only provide delivery service). In nearly two centuries, we have been catering primarily for the delight of our customers. We are fortunate to be loved and supported by many, especially those in the Gion area, till today.

At HISHIIWA, we believe that making traditional Kyoto cuisine that respects the culture and history of Kyoto please our customers the most. Although people’s taste and culinary culture changes in time, we wish to remain the choice of ‘food of Kyoto-ness’ and ‘aspect of Kyoto culture’ for many. Therefore, we devote ourselves to introducing creativity to the long-established Kyoto cuisine making, exploring ways of expressing tastes, colors and presentations, so that we not only inherit the tradition, but also further develop it.

Our Dashimaki Rolled Omelette, White Rice and Colors

Our bentos are prepared with a wish of offering the traditional Kyoto flavor colorfully and delicious even when cooled. Hence, we take particularly care of the ingredients, among which our special preparation of dashimaki rolled omelette and white rice worth mentioning here.

We make dashimaki rolled omelette with the first brewed dashi broth produced with aged Rishiri kombu kelp and freshly shaved bonito, and two sorts of eggs. Our rolling technique makes sure the taste of dashi permeates the whole omelette.

To ensure the white rice does not get hard and immediately softens in your mouth, we adjust our strength of pressing the rice into the bale shape depending on how hard the rice is cooked.

Furthermore, it is not only the taste or texture, but how attractive the bento is presented to you that is so special with us. The expectation towards the moment of revealing the bento is essential. History

Woven into the history of Kyoto, Hishiiwa had gone through several phases of development.

At the time of our establishment, we were recognized as a ‘a caterer for the neighborhood,’ who on a shoulder pole carried fishes purchased from the market, and produced and delivered dishes to the nearby townspeople who made orders.

Later in Kyoto, there developed a culture of ordering cuisines from caterer to home on ceremonial occasions, such as festivals, celebrations and condolences. Since we prepared dishes for special occasions, our cooking technique and presentation, as well as the way of making delicious food even when cooled, have advanced, and our third-generation owner, Matsunosuke, conceived our signature ‘Hangetsu Bento’ (‘Halfmoon Bento’).

Nowadays there are less needs for home delivery for the popularity of dinning out, we started taking banquet orders from teahouses in Gion. In order to provide dishes at their best temperature speedily, our chefs busy delivering in the area becomes Gion’s everyday scene.

Although we have changed through time, our wish of delivering our cuisine as the ‘kitchen of our customer’ has never changed since our establishment. We are going to propose new ways of connecting with our customers from now on, which may contribute to the development of the culture of Japanese caterer. In this way, we would like to keep on catering primarily for the delight of our customers.
